Moroccan Fava Bean Soup

Dear Charlotte:

You managed to find a recipe that required four (!) of the items in my box.  The Moroccan Fava Bean Soup was a tremendous success! (Shoot, I think that word is banned now.)

 

More than half my life ago, I took a trip to Morocco and have been in love with everything about it since, so I was totally psyched to get going on this.  Despite having most of what I needed for the soup, I still needed a few items, so Saturday morning I walked to my local farmer’s market.  Pepper Place (called so because it is in the old Dr. Pepper factory) is the first thing that I remember in the revitalization of downtown Birmingham.

The only thing I found that I still needed were carrots, but what carrots! they were beautiful, and there was this one in the bunch that was positively tie-dyed. It hurt me to purée it later.

 

So, I picked up a couple more items from the store and got started on making me some soup.

I’m still not quite sure what the recipe meant by squeezing the beans at the eye to get the skins out. I only managed to mush up a bean or two trying it before I just stuck my nail into it and pulled.

But, once I had done that, the rest of it was easy.  The veggies on the right (celery, leeks, carrots, and spring onions) went in to the big pot for a few minutes followed by the veggies on the left (fava beans, turnips, potatoes). I left them simmering with the bay leaf and cliantro for a while, then stuck my immersion blender in to make it into purée. And…done!

 

It has made easy lunches and leftovers since then, so I call it success!  Thanks!

 

P.S. My box today contains the following:

  • Salad Mix
  • Strawberries
  • Fava Beans
  • Rainbow Lacinato Kale
  • Cherokee Head Lettuce
  • Red and Chioggia Beets
  • Garlic Scapes
  • Bok Choy

I plan on using the salad mix and strawberries tonight at dinner, but have no plans for any of the rest of these items.

Also, I did not get my meat CSA yesterday (I will have to wait one more week for that).
